ATLANTA – Popular Virginia Highland restaurant Pura Vida is also home of the Super Pan Latino Sandwich Shop. The entrance to the restaurant is tucked away on Blue Ridge Avenue, right off of North Highland, where the main entrance to the restaurant is. Sous chef, Pedro Matos says “It’s meant to be a hole in the wall”.

Pura Vida is known for their homemade breads and Chef Matos arrives at 3 a.m., daily, to handcraft the artisan breads used on all of the Super Pan sandwiches. And around 10:30, the Pura Vida staff arrives and converts their prep kitchen into a Latino sandwich shop.

The restaurant was created as a continuation of the sandwich concept restaurant trend in Atlanta. According to Matos, the restaurant was conceptualized by Chef Hector Santiago and was named for a Puerto Rican TV show featuring a baker-by-day, super hero-by-night named Super Pan.

Matos says Santiago loves sandwiches and his first creation was their signature, Media Dia. The restaurant’s goal is to offer gourmet “supersandwiches” at an affordable price point.  The restaurant opens at 11:30 and closes at 2:30 p.m. and it is only open from Tuesday through Friday.

Matos thinks that every visitor should start off with the restaurants Seasonal Vegetables. The featured veggie is a Cucumber Carpaccio. The dish is composed of cucumbers, radishes, celery, a goat cheese from Spain called “Gotas de Catalan”, lime vinaigrette and local micro celery. He says that the veggie changes daily and it’s a refreshing addition to any meal. The Cucumber Carpaccio costs $4.00 however, veggie prices vary.

The supersandwichs Matos chose are the Pork Belly Buns. The sandwich is crafted with braised Berkshire pork belly, from a local farm, which is confit overnight and flash fried to order. The pork is prepared with smoked pilon sugar, which is Mexican Brown Sugar. The pork is then topped with a cabbage cilantro slaw and an aji coban sauce. This combination is served on Dim Sum style coconut buns which have “an intense coconut flavor”. The sandwich will set you back about $10.

Matos suggests the “Bacon” Guava Shortbread Cookie as a desert. The cookie is created with pork belly fat, as opposed to butter, and sugar and crafted into shortbread. The cookie was created to be modeled after the Mexican shortbread cookie “Polvoron”. The cookie only costs $1.50

To complete the meal, Matos suggests the restaurants artisan Agua Fresca beverages. Auga fresca is a Mexican fresh fruit drink, usually made of fruits like mango, melons, guava, pineapples and strawberries. The restaurant is currently featuring a Mango Lemonade Agua Fresca and it costs $2
